Swizzle Rum Bar & Drinkery is a hidden Craft Cocktail Bar which is inspired by the Colonist Era in United States. The 18th century was a period of in which rum was enormously popular and the glory story of many.
The menu at Swizzle Rum Bar & Drinkery boasts a versatile cocktail list with a focus on classic and contemporary cocktails, as well as a mix of spirit forward drinks and tropical libations. Think drinks like the classic Hurricane made with Banks 5 Island, Plantation Dark Rum and EO grenadine; a coffee-infused dark rum Banana Daiquiri; and the vodka, pineapple, and mint based Missionary Downfall. To soak up those cocktails, bites like burgers, fries and Jamaican jerk chicken wings.
The bar features 24 seats inside and 30 seats in the neighboring lounge, along with an outdoor patio area by the pool with 30 more seats. The decor boasts a mural and walls lined with photos highlighting the history of rum that is meant to be museum-like, which the bartender will gives tours of when they aren’t too busy.
The new outpost is owned and operated by familiar faces to those who frequented Employees Only Miami during its time at Washington Park Hotel. Partners in this new venture include Nathan Torrance, Milos Velickovic, Jason Tune, Strahinja Marjanovic, Nikola Dragojevic, and principal partner Danilo “Dacha” Bozovic, who was one of the original owners of Employees Only Miami.
Swizzle Rum Bar & Drinkery is located at The Stiles Hotel and is open Monday through Friday 7 p.m. to 3 a.m. .
Danilo Dacha Božovic, recently named one of the ten best bartenders in Miami by the Miami Times and the principal bartender to open Employees Only Miami, is the driving force behind the new endeavor. He's brought five members of the EO Miami team onboard for Swizzle, following a similar ideology in making them partners with an ownership stake in the bar's success.
Patrons can expect an elegant atmosphere with a cocktail-driven menu and a strong emphasis on attentive service. "It's very important," Božovic says. "Service, technique, with the same warm hospitality we provided at EO Miami are number one for us."
